Why one job instead of separate bookings per task?

Because that is how the visit is sold and billed. Splitting a Saturday morning into six bookings makes the estimate incoherent and loses the small tasks; a task list keeps the whole visit priceable and finishable.

What happens to tasks that were not finished?

They stay on the job and go to a return visit, so the third shelf is not quietly dropped between the invoice and the next phone call.

Does it handle estimates before the work?

Yes — an estimate visit is a normal booking, the task list and photos come back with it, and the estimate is built from the same job the work will be done under.
